Способность неглазурованного глиняного сосуда дольше сохранять свежесть молока основана на физическом явлении испарительного охлаждения.
1. Пористая структура. Стенки глиняного сосуда, не покрытого глазурью, являются пористыми. Это означает, что в них есть множество мельчайших, связанных между собой пор.
2. Просачивание влаги. Молоко, как и любая жидкость на водной основе, способно проникать в эти поры под действием капиллярных сил. Таким образом, внешняя поверхность сосуда постоянно слегка увлажняется влагой, просочившейся изнутри.
3. Испарение и охлаждение. Вода, оказавшаяся на внешней поверхности сосуда, начинает испаряться. Для перехода из жидкого состояния в газообразное (пар) воде необходима энергия, называемая теплотой парообразования. Эту энергию молекулы воды забирают от стенок сосуда, с которых они испаряются.
4. Снижение температуры. В результате непрерывного процесса испарения стенки сосуда и, следовательно, находящееся в нем молоко, постоянно отдают тепло и охлаждаются. Температура молока в таком сосуде становится на несколько градусов ниже температуры окружающего воздуха.
5. Замедление размножения бактерий. Свежесть молока определяется скоростью размножения в нем бактерий, которые вызывают скисание. Жизнедеятельность этих микроорганизмов сильно зависит от температуры: в холодной среде она значительно замедляется. Таким образом, охлажденное за счет испарения молоко портится гораздо медленнее.
В сосудах из материалов, не обладающих пористостью (например, стекло, металл или покрытая глазурью керамика), этот эффект отсутствует. Их содержимое быстро принимает температуру окружающей среды, что создает благоприятные условия для быстрой порчи молока.
Ответ: Молоко в глиняном сосуде без глазури дольше сохраняет свежесть, так как влага из молока просачивается через пористые стенки и испаряется с их внешней поверхности. Процесс испарения требует энергии (теплоты), которая отбирается у сосуда и его содержимого, что приводит к охлаждению молока. При более низкой температуре процессы размножения бактерий, вызывающих порчу продукта, замедляются.
