Суспензии
Суспензией называют гетерогенную (неоднородную) смесь, в которой твёрдое вещество распределено в виде мелких частиц в жидкой среде. Частицы в суспензии достаточно велики, чтобы со временем оседать под действием силы тяжести (седиментировать) или всплывать. Суспензии непрозрачны и нестабильны.
Примеры суспензий:
- смесь песка или глины с водой;
- побелка (известь в воде);
- фруктовые соки с мякотью;
- некоторые лекарства и краски, которые требуют взбалтывания перед использованием.
Эмульсии
Эмульсией называют гетерогенную (неоднородную) смесь, состоящую из двух или более не смешивающихся друг с другом жидкостей. В такой системе одна жидкость распределена в виде мелких капелек в другой жидкости. Для стабилизации эмульсий и предотвращения их расслаивания часто используют вещества-эмульгаторы.
Примеры эмульсий:
- молоко (капли жира в воде);
- майонез (капли масла в водном растворе уксуса, стабилизированные яичным желтком);
- косметические кремы и лосьоны;
- сырая нефть (смесь воды и нефтепродуктов).
