La mode était lancée! Au XVIIIe siècle Paris comptait 700 cafés. A la veille de la Révolution, Paris aura 900 cafés.
A partir de la Révolution les cafés changent de lieux: du Palais-Royal, on passe aux Grands Boulevards ... (8) les cafés sont à touche-touche. Le plus célèbre d'entre eux est Tortoni. En 1798, un Napolitain du nom de Velloni ... (9) les Parisiens appelleront Tortoni ouvre une boutique de glace à côté du théâtre des Italiens devenu plus tard l'Opéra-Comique.
